Parry Cellars 2003 Cabernet Sauvignon is an elegant cabernet. It has a beautiful ruby color with aromas of blueberry, boysenberry, blackberry and well integrated oak with faint no ...moretes of cardamom, white pepper and truffle oil. In the mouth, the supple, sweet entry opens up into a mid-palate laced with an excellent balance of tannins and berry fruit. The finish lingers with wonderful blackberry and cocoa notes. The wine was aged for 18 months in 100% French oak barrels (44% new / 56% once-used) and was bottled without fining and filtration to preserve the true beauty of our fruit. It pairs well with beef short ribs, a barbequed flatiron or roast pork tenderloin. We are sure you will enjoy this wine now or after bottle aging for a few years.

The well-drained, gravelly lo ...moream soil there helps create wines with a tremendous concentration of cassis, graphite, and other characteristics reminiscent of a great Graves. This wine has just been released and has yet to be reviewed. A true value; it's in a league with wines twice the price and is destined for cult cab status. Look for review in the June Wine Enthusiast Buyer's Guide (suggested retail $85, rated 86 - good value).

2005 Cabernet Sauvignon Howell Mountain, Napa
No one believes me… when I say that we share these grapes with the bears, mountain lions, turkeys and deer in this remote vineyard… that is until they accompany me to the viney ...moreard! These grapes grow on the slopes of a very famous vineyard above 1,400 feet elevation, in a very remote area of the Howell Mountain appellation in Napa Valley. Of all the places where grapes are grown, this is truly a Grand Cru vineyard and appellation. The vineyard itself is cut from the mountain and grows on terraces so steep that walking down the rows is dangerous!
This single vineyard Cabernet Sauvignon is crushed and fermented with extended skin contact and maceration for 21 days. It is then pressed and put into small, French oak barrels for 24 months before bottling.

2004 Portentous Mendocino
"Port-Style" Dessert Wine. This late bottled vintage “port” was a dream to make. The grapes were crushed and chilled down to 45°F and allowed to sit on the skins for six day ...mores, extracting flavors and color. We then added yeast and slowly allowed the fermentation to begin with close monitoring, in order to press off the skins and add our brandy at optimal sugar to stop the fermentation. The blend was then transferred to older barrels and allowed to age for 2 1/2 years before bottling.
The grapes are grown on extraordinary mountain vineyards in Mendocino County. The Petite Sirah comes from the Talmage Bench area just west of Ukiah on the eastern side of the valley. It is grown at an elevation of approximately 1,400 feet.. The grapes get very ripe, and give spicy berry fruit with dark, black inky color.
The Zinfandel comes from the Mendocino Ridge Appellation and is grown at an extreme elevation of 2,900 feet. These are very renowned grapes and grow right on the edge of what is deemed common for viticulture, resulting in very concentrated cranberry-raspberry flavors and aromas.

Normally reserved as a "house wine", we began releasing small batches of ...more the Simpatico in 2001. Bravante Vineyards Simpatico is vineyard-select and then barrel-select, to ensure that this wine is always unique and special. It has beautifully defined fruit flavors of black cherries, and 23 % Cabernet Franc brings luscious blueberry and ripe currant with hints of earth, spice and toasty oak filling the flavor spectrum. The big fruit flavors are seamlessly integrated with refined and highly structured tannic core producing an elegant long and smooth finish. This wine could be enjoyed now, but will benefit from aging for 5-7 years.

2005 Chairman’s Club Cabernet Sauvignon/Carmenère Sonoma County
Very limited in production, the 2005 Chairman’s Club Cabernet Sauvignon/Carmenère is a marriage of two Bordeaux varieties which captures Chalk Hill Estate’s unique personality ...more and terroir. The Carmenère is grown on a tiny, low vigor site with extremely rocky soils, perfect to harness its vigorous tendency. Hand-harvested at a mere one-half ton per acre, the Carmenère was co-fermented on skins with a low-yielding Cabernet Sauvignon vineyard. Deep, dark aromas of black plum and cassis accompany graphite and exotic asian spices. This age-worthy cuvee is opulent in texture, with blackberry fruit, black olive and tobacco flavors. The lingering finish is reminiscent of dark chocolate and mocha, pairing deliciously with roasted meat dishes and artisan cheeses.
