Parry Cellars 2003 Cabernet Sauvignon is an elegant cabernet. It has a beautiful ruby color with aromas of blueberry, boysenberry, blackberry and well integrated oak with faint notes of cardamom, white pepper and truffle oil. In the mouth, the supple, sweet entry opens up into a mid-palate laced with an excellent balance of tannins and berry fruit. The finish lingers with wonderful blackberry and cocoa notes. The wine was aged for 18 months in 100% French oak barrels (44% new / 56% once-used) and was bottled without fining and filtration to preserve the true beauty of our fruit. It pairs well with beef short ribs, a barbequed flatiron or roast pork tenderloin. We are sure you will enjoy this wine now or after bottle aging for a few years.
