Pinot Noir

Pinot noir is a red wine grape variety of the species Vitis vinifera. The name may also refer to wines produced predominantly from pinot noir grapes. The name is derived from the french words for pine and black alluding to the varietals tightly clustered dark purple pine cone shaped bunches of fruit.

Pinot noir grapes are grown around the world, but the grape is chiefly associated with the Burgundy region of France. In De re rustica, Columella described a grape variety in Burgundy in the 1st century A.D. that sounds like Pinot noir. It is widely considered to produce some of the finest wines in the world, but is a difficult variety to cultivate and transform into wine.

In putting together the 2004 Cactus Hill, we leaned heavily on the cooperages that worked successfully with the raw material more than clones that were the strongest for the vintag ...moree. Remond came to the forefront in ’04 along with Cadus and Francois Freres. The completeness of clone 667 became the anchor for the blend with 777 adding a nice cola/sassafras spice and 115 providing some additional muscle. The combination of the three clones produces the now classic black tea/cranberry spice that dominates the Pinots from this property.

The valley’s optimal weather conditions extend the growing season and produce concentrated berries while soils rich in minerals from an ancient seabed infuse the fruit with nuanced flavors.

The 2006 Green Valley is a blend from several vineyards in the Green Valley appellation. The vineyards represent different clones, each of which contributes something unique to the finished wine. Each vineyard site has been carefully selected to display the bright, crystalline fruit, which is characteristic of classic Green Valley Pinot Noir.

This quintessential Green Valley Pinot Noir boasts dark ruby red hues that open to a bright fruit nose with earthy aromas and a smattering of spice. Followed on the palate by flavors of pomegranate, cherries, raspberry, leather, and crushed rose petals that burst in the mouth and continuously evolve as the wine breathes. A well-structured wine, it is ready to drink now and will age beautifully for up to 10 years.

Mostly cool, windy conditions at these locations are optimal for growing Pinot Noir. This blend has com ...morebined aspects of multiple premium vineyards in the same general area.

Aged in a combination of neutral and newer French oak for 14 months:
30% in 2 year old barrels
40% in 3 year old barrels
20% in 1 year old barrels
10% in new barrel
Coopers: Cadus, Seguin Moreau, Demptos
Forests: Center of France, Vosges with medium toast

The winemaking of this delicate fruit was approached with the idea of using more than one method to achieve greater structure and sophistication. Pinot Noir from four vineyards was included in the final blend. Whole cluster fermentation was used with only the Laetitia fruit, a fermentation of intact clusters as picked from the vine with no intervention of machines – all stems and berries are intact. This technique contributed to achieving a wine of greater complexity.

After fermentation, the wine was handled with the least possible intervention. Racking was minimized, and no fining was performed before a light filtration.

This is an accessible Pinot Noir in its youth, but will develop nicely over the next 3-4 years.

As it opens up, the nose in particular gains even more spice and fruit, along with some subtle floral and earthy components. As we have done in the past, we let this wine age in barrel for 16 months, to allow the characteristic tannins of the site to soften, yielding a wine with richness and depth, fleshed out by velvety tannins and framed by good structure. As the fruit and lush mouth-feel continues, balanced acidity brings enough verve to the finish to refresh the palate. Should drink well over the next 3-5 years.
