Wines made from Shiraz are often quite powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries, chocolate, espresso and black pepper. No one aroma can be called typical though blackberry and pepper are often noticed. With time in the bottle these primary notes are moderated and then supplemented with earthy or savory tertiary notes such as leather and truffle. Secondary flavor and aroma notes are those associated with several things, including winemakers’ practices, and terroir.

Food Pairing: Pairs well with grilled and barbecued meats, pork and venison, or fish and poultry that are very light on sauces. Nice with a hunk of rustic bread and olive oil.

A saturated blue-black color in the glass, the aromas remind us of black pepper-rubbed salumi, gunpowder, and star anise. A dry herb and floral quality continues in the mouth, with ...more lavender, chamomile, and sage balancing the big blueberry and blackcurrant fruit. We’ve watched this wine evolve in barrel and bottle, developing delicious nuances slowly over time. We anticipate more of these revelations, in the glass and in the cellar, over the next several years.

Initial aromatic notes are of herb de Provence, especially lavender, with candied almond, cassis and spice a ...morelso contributing. The deeper layers of scent reveal white pepper, oak resin and cocoa. The palate is of medium structure with even, balanced tannins. Chocolate and toffee notes complete the flavors introduced by the bouquet.

The grapes for the 2005 Jade Mountain Syrah Snows Lake Vineyard were hand harvested in the early morning, crushed and destemmed. After a four-day maceration in stainless steel tank ...mores, with daily pumpovers to extract aromas and flavors, it was racked to mostly French oak barrels and aged for 10 months to allow the flavors to integrate and evolve. It was filtered before bottling.Our Syrah opens to rich aromas of smoky wild cherry with a lovely mountain-fruit essence. On the palate, it is gentle, rich and spicy, with flavors of vanilla cream mingled with orange sherbet, black licorice and wild cherry. This very approachable wine is quite well-balanced for its age. A natural with grilled lamb chops, it also stands up wonderfully to flavorful, spicy meat dishes such as marinated skirt steak or peppery beef daube.
