Wine Guide > Syrah

917 visitors
Wines made from Shiraz are often quite powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries, chocolate, espresso and black pepper. No one aroma can be called typical though blackberry and pepper are often noticed. With time in the bottle these primary notes are moderated and then supplemented with earthy or savory tertiary notes such as leather and truffle. Secondary flavor and aroma notes are those associated with several things, including winemakers’ practices, and terroir.

Food Pairing: Pairs well with grilled and barbecued meats, pork and venison, or fish and poultry that are very light on sauces. Nice with a hunk of rustic bread and olive oil.

2005 El Dorado Syrah
El Dorado County

Our Syrah comes to us from a two acre vineyard in Somerset in El Dorado County. The soils are typical of hillside vineyards, shallow and well drained. The fruit was harvested in ½ ...moreton picking bins. Treated similarly to Pinot Noir, a small amount was fermented as whole clusters and the entire must was chilled down to cold soak for extraction. After a spontaneous fermentation started with indigenous yeast we did punch downs every two hours also helped for extraction of flavors and depth of color. The wine was barrel aged for 18 months in neutral American oak. The resulting wine is dark and full with Rhone style richness. The slightly floral aromas precede earthy flavors, rich fruit character, subtle cloves and the moderate tannins call for aging.
