Wines made from Shiraz are often quite powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries, chocolate, espresso and black pepper. No one aroma can be called typical though blackberry and pepper are often noticed. With time in the bottle these primary notes are moderated and then supplemented with earthy or savory tertiary notes such as leather and truffle. Secondary flavor and aroma notes are those associated with several things, including winemakers’ practices, and terroir.

Food Pairing: Pairs well with grilled and barbecued meats, pork and venison, or fish and poultry that are very light on sauces. Nice with a hunk of rustic bread and olive oil.

The grapes for this wine were harvested in four separate lots, between Sept. 26th and Oct. 22nd, a span of almost four weeks. Each vineyard block was picked at optimal maturity and ...more all were fermented in small open top tanks with manual punchdown. The finished wine has intense blackberry and cassis aromas, along with caramel and violets, and the smoky-gamy-bacony signature so unique to Syrah. It is full and rich without being overbearing and has enough chewy tannin to age gracefully for a few years if you can resist drinking it now.

The fruit was harvested in the cool morning hours on the estate, then crushed to tank. Fermentation commenced after approximately 2 days of resting on skins. At relatively warm tem ...moreperatures, the grape skins were hand plunged to achieve the desired color and structure for the wine. Part of this blend was run from skins early for barrel fermentation, while the balance was left on skins for a short maceration time prior to final pressing. The wine was transferred directly to barrel for 17 months of maturation.
