Cass Vineyards and Winery is located in the rolling, oak-studded hills between Paso Robles and Creston on California's beautiful Central Coast. This area that the vineyard calls home offers quiet serenity for the visitor and a perfect growing season for wine grapes.
Sited due east of the “Templeton Gap”, we receive the evening's cooling breezes that the west side of Paso Robles is noted for. We also rest far enough from the coast to generate the heat needed to optimally ripen the Rhone varieties grown in our vineyards. | Paso Robles, CA Phone: 805-239-0873 Website: http://www.casswines.com Appellation: Paso Robles Tasting Room: Monday thru Friday - 12 noon to 5 pm

Viognier
|
2007 Viognier Paso Robles
Our 2007 Viognier is blended with 25% Roussanne. Right out of the bottle, an aroma of white peaches, bright enough to make a Georgia farmer proud, fills the air. The roussanne adde ... mored in gives this wine a rich, mineral, well rounded mid-palate, with subtle notes of honeysuckle, and a finish so crisp and so bright, you could swear you were biting into a fresh yuzu. Chef Brandon recommends this with Eucalyptus grilled abalone with uni tamari emulsion.

Mourvedre
|
2003 Hacienda Paso Robles
Mourvedre is a variety with wonderful fruity characteristics. This Estate block is located directly in front of the Hacienda inhabited by my only vineyard employee who lives on sit ... moree. He watches over this fruit more than any other variety in the vineyard.

Syrah
|
2003 Syrah Paso Robles
Planted to several exciting new ENTAV* clones originating from France, our fledgling Syrah vines produced a paltry 100 pounds of fruit per acre. Anticipating a wine of bold intensi ... morety from these low yielding blocks, we opted to ferment in small bins, manually punching-down the cap, to fully extract color and character from the skins. The resulting wine is deeply pigmented, with fresh berry flavors and unique nuances of white pepper on the palate.

Cabernet Sauvignon
|
2003 Cabernet Sauvignon Paso Robles
This Cab is blended with 25% Cabernet Franc. In our blending trials we noticed that the Cab Franc really helped bring out the nose of the wine. This wine has notes of macerated che ... morerries, fresh pencil shavings, and new unsmoked cigars. Drink this wine with standing rib roast of beef, crusty pan seared Rib-eye steak, or glazed beef with Bourbon-Roquefort sauce.

Syrah
|
2004 Syrah Paso Robles
Deeply pigmented beautiful wine with lots of cherry and a very smooth finish. This Syrah is entirely clone 383. Food pairings include a variety of red-sauced pasta dishes, grilled ... moremeats (especially tri-tip!), wood-grilled pizza, and smoked gouda cheese.
| |
Grenache
|
2004 Rockin’ One Paso Robles
The Grenache was cropped from an estimated 10-12 tons per acre to 4 tons per acre to improve the intensity of the flavor and the color. They were hand picked and delivered to Dan K ... moreleck at his facility in Paso Robles in 2004, the year before we opened our own winery. We were very happy with the nose and the flavors of the Grenache all by itself. We added what we felt was the minimum amount of Syrah to add backbone to the wine without overpowering it.

Cabernet Franc
|
2004 Cabernet Franc Paso Robles
This Cabernet Franc was the last variety to be picked during the 2004 harvest. The longer hang time resulted in concentrated fruit without extremely high sugar − a nice chara ... morecteristic of this variety. The fruit was originally contracted to a winery in Northern California and the fermentation was completed there in 1 ½ ton open top fermenters that were punched down 2 times per day. Subsequently, we negotiated to bring the wine back to Cass Winery where we barrel aged the wine 23 months and racked it after 16 months.

Grenache
|
2005 Grenache Paso Robles
Grenache is always blended with another grape because the tannins in Grenache are naturally very low. Consequently, Grenache all by itself does not age well. You will often find it ... more blended with Syrah and/or Mourvèdre. We were very happy with the nose and the flavors of the Grenache, so we tried blending it with a minimal amount of Mourvèdre to add spice and backbone to the Grenache. Think of it as a hearty Pinot, with lots of strawberry notes.
| |
Mourvedre
|
2005 Mourvèdre Paso Robles
Mourvèdre is often blended with Syrah to bring spice and fruit to the blend. The downside to the blending is that the character of the Mourvèdre is easily overpowered by wines wi ... moreth strong character. We were very happy with the fruit and the finish of the Mourvèdre, so we decided to do this 100% pure version of Mourvèdre.

Syrah
|
2005 Syrah Paso Robles
Our Syrah was blended with a splash of Petite Syrah, and it couldn't have come out better. The blend of the two varietals created a darkly pigmented wine, with abundant fruit and s ... morepices on the nose with juicy tannins for a dry finish. Chef Brandon recommends this wine with a mustard crusted lamb rack.

Other Red
|
2005 Rockin’ One Paso Robles
90pts from Stephen Tanzer! Our Rockin One is a blend of Syrah, Mourvedre, and Grenache. Syrah provides a strong tannin base with a velvety finish, while the Mourvedre adds a smoky ... morenose with ample tobacco supporting it. With a strawberry-jam nose and spicy finish, a good swirl and you can understand what Grenache adds to the blend. Our Rockin One goes nicely with guava glazed pork tenderloin, but don't be afraid to enjoy as an after meal treat on your back patio, with a glass in one hand and a cigar in the other.

Cabernet Sauvignon
|
2005 Cabernet Sauvignon Paso Robles
90 Points from Wine Enthusiast! A blend of Cab Sauv, Cab Franc, and Merlot, this wine perfectly blends together the three kings of Bordeaux. Our Cab has a nose reminiscent of the C ... moreherry Blossom Festival in Okinawa, with compliments of olallieberry, and cocoa. Chef Brandon recommends it be enjoyed with oak grilled fillet or a hearty brazed lamb shank.
| |
Cabernet Franc
|
2005 Cabernet Franc Paso Robles
The Cabernet Franc was harvested late in the vintage at full ripeness. The longer hang time resulted in concentrated flavor and structure in the wine. The ferment was punched down ... moreup to 4 times per day and pumped over when necessary. After 16 months aging in the barrel, the wine also received half that time aging in the bottle to ensure a wine ready to be enjoyed upon release.
| |
Mourvedre
|
2006 Mourvèdre (Hacienda) Paso Robles
Our Mourvedre, known for its minerality and strong tannins in the Rhone valley, is produced as a mono sepage. This stand alone provides an upfront nose of raspberry and black cherr ... morey, with a buttery mid palate, smooth spices and white pepper. Lood has done a brilliant job of giving this wine a dry finish with a multitude of soft, friendly tannins to make it a great wine to pair with a multitude of meals. Chef Brandon recommends it with exotic mushroom ravioli served with a side of sautéed vegetables and a smoked tomato reduction.
