| Viognier was once a fairly common grape, though it is now a rare white grape grown almost exclusively in the northern Rhône regions of France. Around the 1960s, the grape was almost extinct when there were only eight acres in Northern Rhône. The popularity of the wine, as well as its price, has risen and thus the number of plantings have increased. Each year at Acacia we make a very small amount of Viognier from our three-acre vineyard. At harvest the grapes are astringent and plain, but once fermentation begins, the juice in ...more the barrel magically transforms. We whole-cluster press the grapes, followed by a long, slow fermentation in 90-gallon brandy casks. Once the primary fermentation is complete, we stop the malolactic fermentation as necessary to preserve the wine’s freshness and fruit.
The powerful nose speaks of white peach, pineapple, cinnamon, honeysuckle and vanilla. The palate shows a silky richness, turning to fresh apple, citrus, honeysuckle and tropical fruits on the long, exhilarating finish. This wine will do quite well on its own as an aperitif or will give exotic spice to pan-seared scallops in a citrus saffron beurre blanc. |
