2005 Chardonnay Acacia Vineyard
At Acacia Vineyard our aim is to create a rich, concentrated and focused Chardonnay from our remarkable Carneros fruit. We hand harvested the fruit for our 2005 Carneros Chardonnay ... more, then allowed three hours of skin contact to extract flavors from the skin. A brief period of aeration enabled us to extract those delicious flavors and precipitate out any tannins associated with skin contact. The result is a full-flavored Chardonnay with both concentration and elegance.
Vibrant aromas of crème brûlée, ginger, lemon curd and white peach are followed by a creamy entry which blossoms to a full, sweet, peach, nectarine and citrus mid-palate. Medium-bodied with vibrant acidity, the wine finishes long and full. Our 2005 Chardonnay is perfect with all types of seafood, fish, chicken and pork.

2005 Pinot Noir Lone Tree Vineyard
We hand harvested the fruit for the 2005 Lone Tree Vineyard Pinot Noir, and then gently destemmed it before fermenting it in 100% stainless steel tanks. Flavors and aromas were ext ... moreracted during pumpovers, after which the wine was moved to French oak barrels for nine months of aging.This wine is a deep ruby-purple color. The nose combines blackberry, plum, sweet cigar tobacco, hazelnut and earth with floral and rose notes. On the palate, the wine is rich and silky with flavors of ripe red fruit, wet earth and spice at mid-palate. The fine-grained tannins are luscious and broad, with balanced acids that lead to a long finish of fresh blackberries, cherry and vanilla. Enjoy this delicious wine with roasted pheasant or quail, rabbit terrine or rich pasta dishes.

2005 Viognier Carneros Acacia Vineyard
Each year at Acacia we make a very small amount of Viognier from our three-acre vineyard. At harvest the grapes are astringent and plain, but once fermentation begins, the juice in ... more the barrel magically transforms. We whole-cluster press the grapes, followed by a long, slow fermentation in 90-gallon brandy casks. Once the primary fermentation is complete, we stop the malolactic fermentation as necessary to preserve the wine’s freshness and fruit.
The powerful nose speaks of white peach, pineapple, cinnamon, honeysuckle and vanilla. The palate shows a silky richness, turning to fresh apple, citrus, honeysuckle and tropical fruits on the long, exhilarating finish. This wine will do quite well on its own as an aperitif or will give exotic spice to pan-seared scallops in a citrus saffron beurre blanc. | |
