The Sangiovese grapes are first cold soaked for a short period, then a portion of the salmon-hued juice is bled off fraction of the juice is bled off. Shortly after the Mariafeld clone Pinot from the Mission Ranch was crushed and put into 1½ ton open-topped fermenters, juice was drawn off the skins and put into two neutral-oak ba ...morerrels. The pink wine was then fermented completely dry and bottled after only seven months.

This Rose is a lovely shade of coral. In the nose, subtle aromas of orange oil, caraway seed, and cherries give way to a rich mid-palate full of flavor and a dry, persistent finish with great food-pairing acidity. Just over 40 cases of this wine were produced.

My favorite summertime wine is a dry, crisp Rosé and this year’s version is similar to the 2005 and again comes from the vines in front of the winery, blended with grapes from Salm ...moreina vineyard. I bottled the wine with a screw cap to preserve the freshness and delicacy of this wine. Screwcaps are quite rapidly becoming the closure of choice for delicate wines and I expect them to make major strides with all wines in the next few years. 240 cases produced.
