| Claret is a name used in English for red wine from the Bordeaux region of France, along the valleys of the rivers Gironde, Garonne and Dordogne, including Medoc, Graves and St Emilion. Claret wines are sometimes divided into Left and Right bank Clarets- Left bank clarets include the Medoc, Graves and Pessac-Léognan, whilst Right bank clarets include the St Emilion and the Pomerol. Initial aromas of star jasmine, red and black currants, and wild strawberry ...more are framed in the glass by a wealth of uplifting floral high notes, with just a hint of cherry and citrus. On the palate one is greeted with pie cherry, blueberry tart, and lots of kir. This mouth-pleasing entry quickly expands into fullness across the palate suffused with crème de cassis of some density, gradually relegating to a soft finish of plum and a gentle tannin complex.

2002 Claret Central Coast
Claret, an old British term that can be used for a Bordeaux red wine is used by me for this fine blend of 65% Cabernet Sauvignon, 5% Cabernet Franc (both from the Carver Vineyard a ...moretop York Mountain) and 30% Merlot from the Radike Vineyard grown in the Templeton Gap. I harvested the Merlot in late September. The fruit was destemmed, transferred to an open-top fermenter via gravity and went it’s own course with indigenous yeast. The Cabernet Sauvignon and Franc were harvested in mid-October. This fruit was handled in the same manner. After fermentation to near dryness, the musts were lightly pressed, the wine transferred to new and one and two year old French and American barrels. The wines were racked 3 times and bottled unfined & unfiltered in August 2005. The rich aroma of ripe dark berries intermingled with toasty oak combine with full-bodied complex flavors and smooth tannins to make this beverage wonderful for any occasion. |

This dark purple wine had aromas of ripe cherry, blackberries and clove. Rich fruit flavors of cherry and plum are followed by tannins and a long finish. The bright fruit, low pH, and excellent structure of this wine make it a candidate for extended cellaring. This wine can be served with rich cuts of meat, poultry or with pasta.
