The flavors are very clean with peach, nectarine and citrus with subtle butter and vanilla toastiness, producing layers of complexity with an excellent balance of fresh fruit acidity and palate-weight. This wine is ideal for pairing with richly-textured fish and seafood or cream-sauced pasta dishes.

The Petit Verdot adds dark tarry and licorice characters to the aroma and palate. The oak is chosen to highlight these primary fruit characters and complement the wine with vanilla and toasty secondary components. This wine is a treat to make and should be as equally pleasurable to drink in its youth and with 15-20 years of aging. This wine is ideally suited to red meats and pork, or tomato-based dishes.

The nose is very reminiscent of its Bordeaux namesake, with coffee and forest floor notes combined ... morewith red currant and cherry fruit with hints of chocolate. The fruit is complemented with toasty and tarry French oak. The wine displays the full-bodied nature of Cabernet Sauvignon with rich currant fruit and mid to rear structure from both the fruit and the oak. On release, this wine will already have one year bottle age but will age well into the future. In its youth it should be enjoyed with a hearty steak, or as it ages, with beef tenderloin and rack of lamb. This wine should be allowed to breathe or decant prior to serving.
