2002 Cabernet Sauvignon Carol's Vineyard
Rich, dark red with youthful purple hues. The 2002 ‘Carols’ was a treat to ferment, giving up some of the most luscious varietal aromas of currant and dark cherry. One of the most obvious traits to this wine is the beautiful dark purple colors that it gives up so easily during fermentation. The Petit Verdot adds dark tarry and licorice characters to the aroma and palate. The oak is chosen to highlight these primary fruit characters and complement the wine with vanilla and toasty secondary components. This wine is a treat to make and should be as equally pleasurable to drink in its youth and with 15-20 years of aging. This wine is ideally suited to red meats and pork, or tomato-based dishes. |
