To make wine at Stags’ Leap is to be aware of a legacy of winemaking that stretches back to the nineteenth century. With each vintage, care is taken to maintain the inherent character of this famous estate. Grapes are not picked until they have reached full phenolic maturity—i.e. fully ripe seeds and skins, not just appropriate Brix. This practice, requiring attentiveness in the vineyard as harvest nears, ensures that the characteristic big-but-soft Stags' Leap structure is allowed to fully develop.
