Cabernet Sauvignon

2002 Cabernet Sauvignon Pope Valley
This estate fruit is the first harvest of grapes after extensive vineyard renovations and the wonderful quality of the wine reflects those changes. The fruit fermented for twenty d ... moreays, using two different yeasts to achieve the greatest color intensity and classic Cabernet characteristics. After malolactic fermentation, the wine was left sur lies for five months in French Oak barrels. The wine was than racked, aerated, and put back into barrels to rest for another 14 months before bottling. The result is a classic Cabernet with an Old World winemaking style.
The wine is a deep garnet with a nose of deep, roasted fruits and cherries, rich oak and vanilla. The rich, viscous mouth has layers of blackberries that linger for an incredible time. This wine needs a chance to open up to reveal its depth so we suggest decanting, if possible. This would pair well with any red meat dish, game, braised meats, and rich cheeses.

2002 Merlot Pope Valley
At the Eagle and Rose Estate, there are three vineyard blocks of Merlot. The fruit for this wine was chosen from the one particular block that produces grapes bursting with the sce ... morent of violets and rose petals. The fruit fermented for thirteen days on the skins, followed by a light press to retain the clarity and elegance of the wine. The wine was aged in one-year-old French barrels for 22 months.
This wine is soft, round and mouth filling. There are distinct aromas and flavors of strawberries and raspberries with a beautiful balance. The lingering, elegant finish leaves your mouth full of the rich plums, tobacco, chocolate, and roses. As the wine remains open, the layers continue to open up, giving each taste another nuance.
Enjoy this with grilled and braised dishes, pork, or pasta.

Viognier

2003 Viognier Pope Valley
The 2003 vintage was remarkable for the early harvest of the estate fruit. The unusually warm spring allowed the fruit to set and ripen ahead of the normal Napa Valley harvests. Th ... moreis produced delicate fruit that resulted in a crisp, medium to lean style of Viognier. While there are the layers of floral and peach undertones that one expects in a Viognier, this clean, bright version also contains the essence of lemon-drops and vanilla.
The juice fermented in stainless steel tanks until it reached 15 degrees of Brix. At that point, 45% of the juice moved to one-year-old French oak barrels to complete the fermentation. The barrel lot aged on light lees for ten months before the final blending back with the stainless steel aged wine.
This is a fine example of terroir at work, seeing that the soil of Pope Valley will yield with a shortened growing season. There is a lush, viscous mouth feel to this wine, a great little surprise in a bottle. The austere finish on this wine yields just the slightest old style of winemaking with just a touch of sweetness.
Serve this wine lightly chilled for a perfect refreshing summer wine. It also works well with a wide va
