Pax Wine Cellars Viognier |
2004 Aphrodite Viognier
A stunning planting! The face of this hillside is so steep the gentlemen that farm it have nicknamed this planting 'Las Escaleras' which is Spanish for The Staircase. Fifteen year old vines cling to the fluffy white volcanic ash terraces, and produce a tiny crop of delicious Viognier grapes. We whole-cluster pressed the grapes directly into a mixture of new & old French oak barrels where this wild wine fermented naturally, filling the entire cellar with the aroma of fresh orange blossoms. Drink on release and over the next two years. |
