2005 Obsidian Ridge Cabernet Sauvignon
Rapid ripening in mid-summer slowed considerably by September with mild weather prevailing through harvest. Picking began on October 7th - the grapes were very small and the crop level low, focusing intensity in the resulting wine. The clusters were loosely set, with fewer-than-average berries, and many contained only one seed rather than the typical two to four seeds. The modest set meant the grapes enjoyed good exposure to the dry mountain air and strong sunlight at altitude, with fruit ripening quickly in perfect autumn weather. Sugars averaged 27 Brix at harvest while the acidity held at 3.40 pH with 6.8g/L tartaric acid. |
