2005 Cabernet Sauvignon Napa Valley
97% of the 2005 Napa Valley Cabernet Sauvignon is a blend of three different cabernet vineyards within the St. Helena appellation and as such, it is a showcase of that appellation as well as the varietal. Each one of the three vineyards is of a different age, has a separate pruning technique, and utilizes an unique watering cycle, adding layers of complexity to the wine when blended. In a long growing season such as 2005, quality was high across all of St. Helena vineyard sources because the grapes were given extended hang time to develop complex phenolicsin the grape skins.
The 2005 Napa Valley Cabernet is a powerful wine with good structure and balance. Chocolate mingles with layers of blackberry and black cherry on the palate while the well-integrated tannins provide a nice finish. Consider pairing this impressive Cabernet with a pan-seared rib-eye steak au poivre or braised lamb shank with wild mushroom risotto. |
