| The winemaking team focuses their energy on helping to promote the wines by visiting accounts and hosting winemaker dinners. In the lab, Marcie, our lab technician, and Philip, our production and cellar manager, blind inspect 100 cork samples from several vendors, noting a myriad of details such as the content of green wood and cork porosity. The corks that meet Clos Du Val standards move on to a sensory evaluation. Each cork is put in a small vial of a very simple, plain white wine and allowed to soak overnight. The next day, the corks are put in glasses and checked for trace odors of cork taint, known as TCA. | Napa, CA
