2005 Pinot Grigio Paso Robles
The fruit for this wine comes from a single west side Paso Robles vineyard. When we first tasted the fruit at crush, we decided to try a different presentation than is normal for this varietal. Instead of cold settling and aging in stainless steel, we decided to ferment and age in oak. Two yeasts were used in combination and were chosen to highlight the stone fruit and tropical aromas and a full mouth feel. After crush and press, the wine was barrel fermented and underwent partial malolactic fermentation. It was aged over nine months in oak before bottling. |
