2005 Viognier Russian River Valley
The Russian River Valley provides the perfect microclimate for growing aromatic, spicy Viognier grapes. Temperate, sunny days and cool nights extend the growing season and provide the hang time necessary to concentrate these grapes’ exotic aromas. Hand-picked on September 27th, 2005 at 25.5º Brix, at optimum ripeness, the grape clusters were immediately pressed to release their tart, straw-colored juice. After cold-settling for 24 hours in a tank, the juice was racked to neutral (4 year old) French oak barrels for fermentation, and stirred weekly on its lees to enhance the richness and viscosity of the mid-palate. Then, the wine was racked off of its lees and was bottled on July 7th, 2006. After eight months of bottle aging, this perfumey, slightly off-dry wine is ready to be enjoyed. |
