2005 Pinot Noir Edna Valley
The Edna Valley Vineyard 2005 Pinot Noir was a labor of love. We began by cold soaking the hand-picked fruit for 2 days at 55° F. Yeast was added at the end of the cold soak, and the wine fermented in open-topped tanks until dryness. The cap was irrigated at intervals with gentle pump-overs, and submerged completely by one rack and return daily. After the tank was drained, malolactic fermentation occurred in barrel. A single racking was done in December to remove heavy lees from the barrel. |
