Cabot Vineyards Syrah |
2004 Syrah Humbodlt County
This 2004 Humboldt County Syrah is a single-block selection which was picked on October 14th. Cold fruit was destemmed into small one-tonfermenters and punched down three times a day until the wine achieved dryness. A variety of different strains of yeast were employed in order to attain as much complexity as possible. The wine was pressed and hand-bucketed into 2-year-old Rouseau, French oak barrels. The wine remained on the lees until the following spring when it was gently racked and a small amount of new Hungarian oak was utilized to finish the wine. After two years of barrel age, the wine was bottled unfined and unfiltered -- as are all of our efforts.
Notes of fresh ground coffee, kirsch, mulberry, dark red cherry, game, and sassafras lead into a spicy, dark red-fruited, lush mid-palette, with a smooth texture, and ripe tannins. This wine is rich and full flavored, and shows the spicy, leathery, gamy qualities that make Syrah such an intriguing varietal. |
