How do you tell a good wine from a bad wine? Or a great wine from a good wine?

Isn't the wine mystique just an excuse to get hammered?

"Oh, I'm cooking fish tonight - a Chardonnay would go great with that!"

Really?

And is beer-pairing any less legitimate than wine-pairing?

When tasting notes claim a coffee flavor, are we talking about a subtle hint of coffee? And what causes that?
