Details: During the past 10 years, Paso Robles has emerged as one of few areas in California producing “world class” Cabernet Sauvignon. This J. Lohr Cabernet Sauvignon Symposium will discuss how soil and climate are very limiting factors in determining these optimum areas, and also examine the reasons why Cabernet does not develop superior varietal character in areas that are either too warm or too cool. We will sample Cabernets from Napa, Sonoma and Paso Robles, then compare two slightly different styles produced from each of these regions and evaluate the factors responsible for this differentiation.
