Job Description: • Liaise with viticulturists who manage planting programs and the cultivation and production of grapes.
• Conduct various laboratory tests to monitor the process of grapes, to ensure their quality and to determine the correct time for harvest.
• Organise the crushing and pressing of grapes, the settling of juice and the fermentation of grape material.
• Place filtered wine in casks or tanks for storage and maturation.
• Prepare plans for bottling wine once it has matured and make sure that quality is maintained when the wine is bottled.
• Supervisor cellar personnel involved in the production of wine.
• Supervise the maintenance of the vineyard during the off-season.
• Liaise with marketing and sales staff to make sure of the production of appropriate wine types, styles and qualities.
• Conduct technical in-service training for cellar staff.
• Give guided tours, conduct tastings and advise visitors about various aspects of wine or grapes.
• Co-ordination of tasks between vineyard and winery. Viticulturists manage planting programs and the cultivation and growing of grapes at the vineyard, the winemaker is in charge of the next step, and they follow a routine during the year.
• Contracts with growers to provide fruit for processing or cooperates with Horticulturists of company vineyard in grape production.
• Examines grape samples to ascertain presence and extent of such factors as sugar and acid contents, and ripeness.
• Orders grapes picked when analysis indicates they are at degree of ripeness desired.
• Coordinates processes and directs workers regarding to testing and crusing grapes, fermenting juice, fortifying, clarifying, aging, and finishing of wine, including, cooling, filtering, and bottling.
• Blends wine according to formulas or knowledge and experience in wine making. May also develop new processes to improve product.
• When processing champagne, may also designate champagne maker. When processing wine into vinegar, is designated Vinegar maker.
• Determine the length of the maceration process. Guide the filtering of wine to remove remaining solids. Test the resulting wine to check quality and composition.
