California is, after Bordeaux, the worldâ€™s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

The vines are over 30 years old and the grapes produce wine with intense aromas and tastes of blueberry, boysenberry, cassis and plum with spicy, cedar and clove overtones. The wine is 95% Cabernet, 5% Merlot with a field blend of Cabernet Franc, and has been aged for 18 months in French oak barrels. The concentration and ample tannic structure should allow for 8-to-10 years of bottle aging. Red meat dishes are the pairing of choice for the 2003 Cabernet. To soften the wine and add lushness to the mid-palate, we blended in 10% Merlot from our Behler Estate Vineyard, which ripened earlier in the season, and 10% Petit Verdot from the Rockpile Vineyard to add spiciness to the flavor profile. Aging the wine for two full years in French oak barrels adds hazelnut, almond and vanilla flavors to this complex Cabernet Sauvignon. After one year of bottle aging, the wine is ready to drink now, and will continue to evolve for up to 12 years in proper cellar conditions.

The 2004 harvest was one of the earliest I can remember. A heat wave in early March forced budbreak and high temperatures continued throughout the summer. A hot spell in late Augus ...moret gave sugar levels a boost and we were ready to pick by September 10th. Despite the early harvest, fruit quality was great with plump berries and ripe flavors that have resulted in a very sexy, full-bodied wine with deep color and complex flavors.
