California is, after Bordeaux, the world’s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

At entry the wine is surprisingly silky and round, with forward flavors of vanilla, sage, grilled fruit, rosemary and toasty French oak. The texture is full and rich and the fruit flavors linger.

With the long 1999 growing season, this vintage exhibits characteristics typical of the vineyard which ...morehas been the fruit source for the Cornerstone brand since we started in 1991. This wine has a clean, sweet aroma of toasty oak and spice with fruity notes of cranberry, dried cherries and raspberries. Also in the nose are undercurrents of slightly sweet anise, cocoa and chamomile tea. Soft on the entry, the palate shows up-front sweet, juicy red cherries and a little cola-spiciness with nicely resolved tannins.

I left the wine to aerate in my glass and tasted it periodically. Each time it opened up new dimensions. I like this wine. It is really good now but definitely worth cellaring as well.

Often I get the question about what is the difference of our mountain Cabernet compared to valley floor grown grapes.

On our rocky mountain vineyards, the vines work very hard. The vines yield small berries and much less grapes per acre. Combined with our natural farming and winemaking they produce intense, refined yet forceful wine.

I would say that our mountain Cabernet has a more focused and dense structure, more depth than a typical valley floor wine. It takes longer for this kind of wine to open up. It is well worth the extra months' wait.

The wine displays t ...morehe great mountain intensity you are used to appreciate in our Cabernet. A rich nose full of mature red berries, earthy overtones and coffee nuances blends with vanilla making the bouquet an extraordinary experience. The texture is extremely pleasant and smooth contributing to a wine that is intense and full bodied, but also round and ample with many layers showing the wine’s multiple dimensions. The finish is dominated by fruits and spices and the French oak adds both flavors and complexity.

This vintage is enjoyable now and will continue to develop very nicely over the next 5 years.

2005 Cabernet Sauvignon

After crushing and cold-soaking the fruit for 24-36 hours to enhance extraction, the juice from each vineyard lot was fermented separately in temperature-controlled stainless steel ...more tanks, at warm temperatures, to fully extract color and flavor. Fermentation completed in approximately seven days, but the wines macerated on the skins for an additional three weeks to maximize color and flavor extraction and enhance tannins. The free run juice from each lot was then drained and transferred to French oak barrels, 57% new, for aging. During this period, we frequently taste each lot to monitor its aroma and flavor development, texture, and oak character. In spring, 2006, the lots chosen for our Napa Valley bottling were blended, and subsequently aged an additional 14 months in barrel before bottling in July, 2006.

After crushing the grapes, the juice is cold-soaked for 48 hours before fermentation is initiated with a cultured French yeast strain that enhances mid-palate texture, depth and intensity. After fermentation completes, the wine enjoys an extended, 20-day maceration on the skins to further extract color and flavor while softening tannins. We then gently drain the free run wine from the skins and age it in French oak barrels. The 2005 Vine Hill Ranch aged 22 months in French oak, 35% new, before bottling in July, 2007.

Our Howell Mountain grapes possess deeper color, higher acidity and more tannin than our valley-grown fruit. As a result, our winemaking approach with Dancing Bear is to capture th ...moree distinctive, intense character of the fruit without extracting overly aggressive tannins. To do so, we carefully monitor fermentation temperatures and the ‘cap’ of skins at the top of the fermenting tank, whose contact with the juice determines the degree of tannin extraction. Winemaker Julianne Laks carefully manages these processes during fermentation and maceration (the period after fermentation when the wine remains in contact with the grape skins), tasting the wine daily to assess tannin levels and ‘mouth-feel’. When Julianne senses the wine has achieved an optimal balance of fruit intensity and ripe tannins, we drain the free run wine from the skins (no ‘press wine’ is used) and transfer it to French oak barrels for aging. The 2004 Dancing Bear was aged 22 months in French oak barrels, 45% new, prior to bottling in August, 2006.
