California is, after Bordeaux, the world’s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

Food Pairing: Pairs well with venison, game poultry, lamb, portabella mushrooms and any grilled meats. After dinner pour with dark and bitter chocolate, or cheddar and huntsman cheeses.

2003 Corison Cabernet Sauvignon

Picking the delicious 2003 Corison Cabernet Sauvignon was a challenge, but luckily I had my last picking scheduled just as the long, wicked late September heat spike hit. The fruit ...more got to the winery in excellent shape and without the sugars going through the roof. The otherwise even ripening season from veraison through the middle of September delivered complex flavors and inky color.

The resulting wine is packed with luscious Bing cherry and plum chutney fruit and rendered rich and complex with undertones of cocoa, nutmeg, white pepper and "Rutherford dust". Trademark floral highnotes are already beginning to develop in the bottle. Lush with gentle, mouth-coating tannins, it gracefully walks the line between power and elegance, perfectly balanced for a long, distinguished life.

he was right on the money.

The majority of fruit for our 2002 Reserve Cabernet Sauvignon was grown on hillside vineyards in the Sonoma Valley; a region known to yield some of the most concentrated and balanced Cabernet Sauvignon in Sonoma County. After aging lots separately in seasoned French oak barrels and a small amount of American oak barrels for 23 months, we selected the only finest for our Reserve Cabernet Sauvignon to blend and return to French oak barrels for another five months of aging.

The resultant wine is a perfect vision of violet with purple hues and tones of brick-red around the edges. It shows certain richness and there is no shortage of complexity. Rich aromatics of black cherry, cassis and leather introduce your palate to a symphony of flavor profiles with black fruit in the forefront of undertones and overto
