California is, after Bordeaux, the worldâ€™s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

Our 1997 GAN EDEN Limited Reserve Cabernet Sauvignon is a wine of surpassing elegance and style. 100% varietal, it was created entirely from fruit grown at Eaglepoint ranch. The vineyards are the highest and steepest in Mendocino County. This is true high-mountain Cabernet Sauvignon. It is highly extracted, and this makes for a long-lived style of wine which is not for everybody, tight and tannic. However, 1997, as a vintage, was noted for supple tannins, and it worked to favor accessibility in these grapes. The wine, though tannic, is drinkable now, even while indicating enhanced ageability. It is not as tight as it would have been in a normal year, allowing some fruit character to manifest itself even in a wine with so little time in bottle (barely a year and a half- very little from the standpoint of mountain Cab).

This wine completed malolactic fermentation and was partially aged in a combination of French, European and American oak barrels providing an elegant, beautifully balanced wine with a medium body and smooth, lingering finish.

Predominately Cabernet Sauvignon, the addition of small amounts of Cab Franc and Malbec give this wine added depth and character. Black cherry, black currant, and earth dominate this dark flavored Cab. Light oak on the nose, dark chocolate, dusty and bittersweet.

For drinking now, decant this wine for an hour or more. Balanced, well structured with acidity and tannins to insure that -with proper cellaring- this wine will continue to improve for five to eight years.
