California is, after Bordeaux, the worldâ€™s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

We have worked with this grower for a number of years and watched the quality soar. This tiny, high elevation vineyard is above the fog level, but benefits from the cool evening ai ...morer to slow maturation. Mountain vineyards are known for tremendous acid retention, smaller clusters and low yields, resulting in intense, balanced and well-extracted fruit. While the goal with this wine was never to obtain excessive ripeness and extract, it maintains focused fruit and a food friendly nature. This wine was held in the finest French oak barrels (30% new) for 18 months before bottling and bottle aged for an additional 30 months prior to release. Crafted in a style which will evolve gracefully for many years, this wine will be appeal to the Sonoma County Cab fans.

After malolactic fermentation, the wine was left sur lies for five months in French Oak barrels. The wine was than racked, aerated, and put back into barrels to rest for another 14 months before bottling. The result is a classic Cabernet with an Old World winemaking style.

The wine is a deep garnet with a nose of deep, roasted fruits and cherries, rich oak and vanilla. The rich, viscous mouth has layers of blackberries that linger for an incredible time. This wine needs a chance to open up to reveal its depth so we suggest decanting, if possible. This would pair well with any red meat dish, game, braised meats, and rich cheeses.

The Dry Creek Valley is approximately 16 miles long and only 2 miles wide at its widest point. It was created by uplift and subsidence along ancient earthquake faults, accompanied by the deposit of alluvial material. While coastal cooling occurs in the late afternoon during the summer, fog rarely enters the valley until after nightfall, providing the long hours of sunshine needed to bring the Cabernet Sauvignon grapes to full maturity. Climate records also show that the average nighttime low temperature in the Dry Creek Valley during the growing season is lower than that in either the Alexander Valley or upper Russian River Valley. These cool evening temperatures enable our Cabernet Sauvignon to mature more slowly and also preserve the natural acidity that gives this wine balance.

Aged for 24 months in neutral French oak, this wine is very approachable now though will age quite nicely.
Displaying classic mineral aromas of slate rock, hints of bay leaf with plum and Black Cherry fruit, this Cabernet unfolds delightfully with each sip. Black Cherry fruit carries through on the palate accented by floral notes of violet. Fruit flavors are complemented by tobacco leaf and tinder box with black pepper on the finish.
