Details: Byington Winery will be hosting Steve Angelo, local chef of The Purple Onion Catering, for a six course dinner, paired with wines. The evening will begin with passed hors d’oeuvres of Beef Carpaccio with Spinach and Anchovy Butter White Truffle and Potato Pissaladieres paired with the crisp acids of the Redwood Hill Vineyard Chardonnay. Following the appetizers guests are invited to sit and enjoy Lobster, Mandarin and Watermelon Ceviche marinated with Lime, Ginger and Thai Chile, for which the 2005 Liage, a blend of Sauvignon Blanc and Viognier will play a perfect compliment. The 2006 Saignée, dry Pinot Noir Rose, will highlight the delicate sweetness of the Crab and Fennel Salad on a bed of Baby Lettuces drizzled with a Lemon Fennel Dressing. The pinnacle of the menu is a beautiful Rosemary and Thyme Grilled Lamb Rib-Eye with steamed long Beans, Pancetta spiked Potatoes finished with a Reduction of Byington Pinot Noir to which the 2004 Estate vineyard Pinot Noir is a natural compliment. The Humboldt Fog Goat Cheese with Thyme Crisp Bread and Nasturiums is a perfect end to a lovely meal, and the 2004 Messina Vineyard Merlot is a perfect accompaniement. As a last sweet treat enjoy the chocolate Ganache Tartlet with Fleur de Sel along with the 2003 Tres Anos Porto. Seating is limited and reservations are required.
